Tofu--a Revolutionary food?

Last night, I saw the first part of a delightful interview of David McCullough, award winning presidential biographer, on 60 Minutes. Among other fascinating facts, I learned that in a letter from London to John Bartram in Philadelphia, Pennsylvania, on January 11, 1770,  Benjamin Franklin introduced tofu to our diet some 200 years before the hippie movement seems to have rediscovered this source of plant protein.
